Pork Tenderloin with Balsamic Fig Sauce

Ingredients
1 lb pork tenderloin, trimmed of fat
Cooking spray or olive oil
8-10 dried Mission figs
2 tablespoons balsamic vinegar
2 tablespoons water
2 tablespoons low-sodium soy sauce
1/2 tablespoon brown sugar
1 small onion, chopped
Salt
Black pepper

Directions

Preheat oven to 425 degrees. Season pork evenly with salt and pepper, then coat with cooking spray or olive oil. Heat a medium sized skillet over medium high heat and coat with cooking spray. Add pork and cook for about 5 minutes or until browned on all sides. While pork cooks, chop figs and onions. Combine vinegar, water, soy sauce and brown sugar in a small bowl. When pork is browned, remove pan from heat. Add onions, figs, and vinegar mixture to pan and stir. Place pan in oven and bake uncovered for 15 minutes or until the center is slightly pink. Remove pan and let stand for 5 minutes before slicing and serving. Enjoy!!

Suggested Side Dish: Mashed potatoes or roasted acorn squash!
