Orzo Summer Salad

Ingredients
1 cup uncooked orzo
1 1/3 cups diced cucmber
1/3 cup diced red onion
1 cup chopped tomato
1/2 cup chickpeas, drained and rinsed
1/3 cup minced fresh parsley
3 tablespoons fresh lemon juice
1 tablespoon chopped fresh basil
2 teaspoons minced French mint
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped, pitted kalamata olives
1/3 cup (1 1/2 oz) crumbled goat cheese
Prep
Prep Time: 15 min., Cook Time: 8-10 min.
Directions

Cook orzo according to the directions on box. When ready, drain water. Combine orzo, cucumber and red onion in a large bowl. In a separate bowl, whisk together parsley, lemon juice and the next 5 ingredients (through black pepper). Stir this into the orzo mixture and carefully add tomatoes, kalamata olives and goat cheese, tossing together to coat. Enjoy!!

Note: Feel free to add sautéed shrimp or grilled chicken to this for a protein packed meal!
