Scary Good Pumpkin Cookies with Browned Butter Frosting

Ingredients
2/3 cup granulated sugar
2/3 cup packed brown sugar
3/4 cup unsalted butter, softened
1 tsp vanilla
1/2 cup pumpkin puree
2 eggs
2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
For the Frosting
3 cupts powdered sugar
1 tsp vanilla
3-4 tbsp skim milk
1/3 cup unsalted butter

Prep Time: 10 min., Bake Time: 10-12 min.
Directions

Preheat oven to 375 degrees. In a large bowl, beat the sugar, brown sugar, 3/4 cup butter and vanilla with an electric mixer until well incorporated, scraping the sides of the bowl if necessary. Beat in the pumpkin and eggs thoroughly. On low speed, slowly add in flour, baking soda, cinnamon and salt a little at a time. On ungreased cookie sheets, drop cookie dough by the tablespoon. Bake 10-12 minutes. You’ll know they’re ready if no indentation remains when touched in the center. Let cool completely on cooling racks.

While the cookies bake, you can prepare the frosting. In a medium bowl, mix together powdered sugar, vanilla, and 3 tablespoons milk. Heat butter in a medium saucepan, stirring constantly until light brown. Pour browned butter over powdered sugar mixture. Beat on low speed until smooth for about a minute. Gradually add remaining tablespoon of milk to make frosting creamy and spreadable. When cookies are cooled, frost them generously. Have a Happy Halloween!!

Tip: Be creative! Fill a large Ziploc bag with the frosting and cut the corner to pipe it in an array of fun Halloween designs! Make a scary spider web. Or pipe mummy rags and place candy to look like eyes! You could even dye the frosting orange so the cookies look like pumpkins! Have fun!
