Soft and Decadent Chocolate Crinkles

Ingredients
2 cups white sugar
1/2 cup confectioner's sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 cup unsweetened cocoa powder
1/2 cup vegetable oil
1/2 teaspoon salt
4 eggs

Directions

In a medium bowl, mix together cocoa powder, white sugar, and vegetable oil. Add in eggs one at a time then stir in the vanilla. In a separate bowl, combine flour, baking powder, and salt. Then, stir this mixture into the cocoa mixture until it turns into dough. Cover the dough and place in the refrigerator for 4 hours.

When the dough has chilled after this time, preheat your oven to 350 degrees. Line your cookie sheets with parchment paper and roll your dough into 1-inch balls. You can use an ice cream scooper if you like to easily transfer them onto the sheets! Gently roll the balls in confectioner's sugar until fully coated. Place them on the cookie sheets and bake in a preheated oven for 10-12 minutes. Tranfer the cookies onto wire racks once they're out of the oven and slightly cooled.
