Red Potato Salad

Ingredients
3 pounds red potatoes, sliced or cut into quarters
3 tablespoons Dijon mustard
½ cup olive oil
1/3 cup white wine vinegar
Pinch of sugar
Salt
Black Pepper
Chives for garnish
Directions

Cook potatoes in salted boiling water for about 8 minutes. Drain and let them cool. In a bowl, whisk together white wine vinegar, Dijon mustard and a pinch of sugar. Now whisk in olive oil, salt and pepper. Toss this with the potatoes and top with chives. You can serve at room temperature or cold. If you like it cold let it chill in the refrigerator for about 2 hours. Enjoy!
