Baked Mac and Cheese

Ingredients
1 lb elbow macaroni or penne pasta
3 tablespoons olive oil
3 tablespoons butter
1/2 cup flour
2 cloves garlic, minced
2 tablespoons Dijon mustard
4 cups skim milk
1/2 teaspoon paprika
1 1/2 cups panko bread crumbs
8 oz sharp cheddar cheese, shredded
4 oz fontina cheese, grated
4 oz gruyere cheese, grated
salt
freshly ground black pepper

Prep Time: 15 min., Cook Time: 30 min.
Directions

Preheat oven to 375. Grease a 3 quart casserole dish with cooking spray. Next, cook pasta according to box instructions until al dente. Drain and transfer to casserole dish with a little butter so the pasta does not stick. Add olive oil and garlic to sauté pan over medium heat. Stir in flour and mix with a whisk for a few minutes. Slowly, stir in milk a little bit at a time, whisking continuously to incorporate. Add in paprika, mustard, and salt and pepper to taste. Finally, stir in the cheeses slowly until melted and silky smooth. Adjust seasoning if necessary. Add pasta to sauce mixture and stir together then transfer back to the casserole dish. Melt 3 tablespoons of butter in the microwave. Stir in panko breadcrumbs and spread this mixture evenly over pasta. Bake in the oven for 30 minutes until golden brown and bubbling. Enjoy!
