 Banana Cupcakes with Cream Cheese Frosting

Ingredients
1 ½ cups all purpose flour
½ teaspoon baking soda
1 ½ teaspoons baking powder
¼ teaspoon salt
¾ cups sugar
½ cup (1 stick) unsalted butter, softened
1 teaspoon pure vanilla extract
2 eggs
3 ripe bananas, pureed
For the Frosting
1 (8 oz) package cream cheese, softened
½ cup (1 stick) unsalted butter, softened
1 (16 oz) package confectioners’ sugar
1 teaspoon pure vanilla extract

Bake Time: 25-30 minutes
Directions

Preheat your oven to 350 degrees. Line 16 muffin cups with festive paper liners. Mix flour, baking soda, baking powder, and salt together in a bowl and set aside. Cream together the sugar and butter until light and fluffy. Now, add in the eggs one at a time and the vanilla until well incorporated. Add in the flour mixture a little at a time and blend until just mixed.

Stir in the bananas and mix all ingredients well. Pour an equal amount of batter into cupcake liners. Bake 25-30 minutes until the tops turn a light golden brown and a toothpick comes out clean. Let the cupcakes cool completely on a wire rack. To prepare the frosting, beat together the butter and cream cheese at medium speed until smooth. Gradually add in the powdered sugar on low speed until blended. Finally, stir in the vanilla. Frost cooled cupcakes and enjoy!

Tip: Feel free to be creative! Sprinkle sweetened, shredded coconut on top of the frosted cupcakes for presentation and added coconut flavor. You could even place jelly beans or chocolate eggs on top of the shredded coconut so they look like bird nests!
