Black Bean Burritos

Ingredients
4 flour tortillas (regular size)
2 tablespoons vegetable oil
1 small onion, chopped
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 red bell pepper, chopped
1 (15 ounce) can black beans, rinsed and drained
2 tablespoons fresh cilantro, chopped
3 ounces cream cheese
1/2 cup shredded sharp cheddar cheese
1 fresh tomato, chopped
1 avocado, sliced (optional)
Prep
Prep Time: 10 min., Cook Time: 15 min.
Directions

Preheat oven to 350 degrees. Wrap tortillas in foil and place in the oven. Bake for 15 minutes. Heat oil in skillet over medium heat. Add onion, bell pepper and garlic to pan, cooking for 2 minutes. Pour beans into skillet and cook another 3 minutes. Cube cream cheese and add to skillet along with cheddar cheese and salt. Cook for 2 minutes, stirring occasionally until melted and incorporated. Add in cilantro and tomato. Spoon the mixture into the heated tortillas and add avocado slices. Roll tortillas up and enjoy!
