Ingredients
1 lb bag tortilla chips
1 lb ground beef
1 package sloppy joe seasoning or your own mix
6 oz can tomato paste
1 ½ cup water
½ teaspoon paprika
2 cups shredded, sharp cheddar cheese
2 cups shredded, Monterey jack cheese
1 can black beans, rinsed and drained
2 tomatoes, chopped
2 scallions, chopped
1 avocado, sliced
1 tablespoon sour cream

Directions

Brown the meat in a skillet over medium-high heat. Drain any excess liquid and stir in seasoning mix, water, paprika, and tomato paste. Bring to a boil, reduce heat and simmer for about 10 minutes. Set aside. Preheat oven to 400 degrees. Add half of the chips in a single layer to a large baking sheet lined with parchment paper. Add half of the meat, beans and cheeses overtop. Then, add the second layer of chips and sprinkle the remaining meat, beans, and cheeses on top of them. Add some extra cheese if you’d like! Bake for about 10 minutes or until all of the cheese is melted. Remove from the oven and top with tomatoes, scallions, avocado, sour cream and salt. Enjoy!
