Christmas Ginger Snap Cookies
About 4 dozen
¾ cup unsalted butter, softened
½ cup packed dark brown sugar
½ cup white granulated sugar
¼ cup unsulphured molasses
1 large egg
½ teaspoon pure vanilla extract
2 cups all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 ½ teaspoons ground cinnamon
2 teaspoons ground ginger
½ teaspoon ground cloves
1 cup white granulated sugar for coating
Prep Time: 15 min

With an electric or hand held mixer, beat the butter and sugars until light and fluffy, about 2-3 minutes. Add the molasses, egg, and vanilla extract and beat until incorporated. In a separate bowl, whisk together flour, baking soda, salt and spices. Add this to the butter and sugar mixture and mix well. Cover and chill the batter in the refrigerator for about 30 minutes until firm. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Place 1 cup granulated sugar into a shallow bowl and roll the balls of dough in the sugar until well coated. Place them onto the baking sheets and slightly flatten the top of each dough ball. Bake for 12-15 minutes depending on how soft or crispy you like them! Enjoy!
