Creamy Sweet Potato Casserole

5 sweet potatoes, cubed
1/4 cup reduced fat margarine, softened
1 pinch ground cinnamon
1/2 cup packed brown sugar
3 tablespoons orange juice
1 (10.5 ounce) bag miniature marshmallows

Directions

Preheat oven to 350 degrees F. Wash potatoes and cut into cubes so they boil faster. Place sweet potatoes in a large pot with water completely covering the potatoes. Bring to a boil and cook until fork tender, about 20 min. Drain the water, let cool a bit, then peel the skin and mash sweet potatoes. Put sweet potatoes in a mixing bowl and combine with margarine, brown sugar, orange juice, and cinnamon. Spread mix evenly in a 9 x 13 inch baking dish. Cover the entire mixture with miniature marshmallows. Bake for about 30 minutes in the oven until marshmallows are golden brown on top.
