Fall Fresh Tomato Basil Soup

Ingredients
3 Tbs Olive Oil
1 Tbs Minced Garlic (3 Cloves)
1 1/2 Cups Chopped Red Onions (2 Onions)
2 Carrots, unpeeled and chopped
1/4 Cup Packed chopped Fresh Basil Leaves
4 Pounds Tomatoes, coarsely chopped (5 large)
1 1/2 tsp Sugar
1 Tbs Tomato Paste
3 Cups Chicken Stock
1 Tbs Kosher Salt
3/4 Cup Heavy Cream or milk
2 tsp Freshly Ground Black Pepper

Prep Time: 10 min., Cook Time: 40-50 min.
Directions

Heat the olive oil in a large pot over medium-low heat. Add onions and carrots and sauté for about 10 minutes until tender. Add garlic and cook for a minute. Add tomatoes, sugar, tomato paste, basil, chicken stock, salt and black pepper and stir to incorporate. Bring the soup to a boil, then lower the heat and simmer for 30-40 minutes until the tomatoes are very tender. Finally, add the cream or milk and process it through a food processor. Garnish with more basil (optional). Enjoy!

Add some parmesan croutons or toast garlic bread for a crunchy side!
