Fast and Flavorful Shrimp Fajitas

Ingredients
2 lbs raw shrimp, peeled and deveined
4 tablespoons olive oil
3 tablespoons fresh lemon juice
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Salt
Ground black pepper
1 medium onion, sliced thin
1 green bell pepper, sliced
1 red bell pepper, sliced
8 flour tortillas
1 lime

Inactive Prep Time: 15 minutes; Cook Time: 26 minutes
Directions

In a large resealable plastic bag, combine the shrimp, 2 tablespoons olive oil and the next 7 ingredients. Seal and toss the bag around so everything gets evenly coated. Place this marinade in the refrigerator for 15 minutes.

Meanwhile, heat a large skillet on medium high heat letting it get very hot. Add 2 tablespoons olive oil, sliced onions, bell peppers and salt and pepper. Cook, stirring occasionally until the onions are caramelized, about 20 minutes. Now remove the marinade from the refrigerator. Heat another skillet on high heat and add 2 tablespoons olive oil. Remove the shrimp from the marinade and add to the hot skillet. Discard the marinade.

Cook shrimp about 2-3 minutes per side until cooked through. Remove from the heat and squeeze fresh lime juice over the shrimp. Combine the shrimp with the cooked onions and peppers and serve in warm tortillas along with your favorite condiments like sour cream, guacamole and salsa. Enjoy!

Tip: Add a dash of Sriracha sauce to the marinade to give the shrimp a spicy kick!

Side Dish: Serve with a cool and refreshing watermelon salad. Chop watermelon into bite-size chunks and add feta cheese and fresh mint for a uniquely sweet and salty flavor combination.
