Fluffy and Flavorful Chestnut Stuffing

2 cups chestnuts
1 1/2 cups margarine
1/2 cup chopped onions
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons poultry seasoning
2 loaves of day-old bread, cut into cubes
3 eggs
1/4 cup milk

Directions

Preheat the oven to 350 degrees F. Cut slits in the surface of the chestnuts and place the chestnuts in a medium saucepan with enough water to cover all of them. Bring to a boil. Cook for 25 minutes or until the chestnuts are tender. Then drain, peel, and chop them. Melt the margarine on the stove in a medium saucepan over medium heat. Stir in chestnuts, onion, salt, pepper, and poultry seasoning . Cook the mixture until the onions are tender for about 3-5 minutes. Transfer to a medium sized baking dish and mix all together with the cubed bread. In a separate small bowl, beat together 2 eggs and ΒΌ cup milk. Then, drizzle this mixture over the rest of your stuffing mixture. Bake for 30-45 minutes in the preheated oven, until surface is crisp and lightly browned.
