Focaccia Panini with Grilled Eggplant and Zucchini!
Yields
4 panini
Ingredients
4 focaccia or 8 slices of any bread you like
8 roasted red peppers (in a jar is fine)
1 cup feta cheese, crumbled
6 tablespoons hummus
4 zucchini, thinly sliced
1 medium eggplant, thinly sliced
Olive Oil
Balsamic vinegar
Oregano
Salt and Pepper to taste

Directions

Cut zucchini and eggplant in half, then in quarters. Then slice thinly. Drizzle olive oil over the zucchini and eggplant. Then add oregano, salt and pepper. Grill veggies over medium high heat until tender and golden brown. Remove and place inside sliced focaccia bread. Assemble the rest of the Panini by adding the red peppers and feta. Finish with a splash of vinegar. Spread hummus on the other half of the focaccia and place it on top of the assembled sandwich. Lightly brush the focaccia or bread with olive oil and grill until golden brown. Enjoy!

Start with 1 ½ pounds of sliced, seedless watermelon, rind removed. Place watermelon in a food processor or blender and blend until smooth. Strain through a sieve into a bowl and really push it through with a spoon so you get as much of the juice as possible! Next place the strained juice in a pitcher and add the zest of one lemon. Next, in a small bowl, whisk together ¾ cup of lemon juice and ½ cup honey until the honey dissolves. Then, stir this into the watermelon juice. Finally stir in 1 ½ cups of cold water. Cover and refrigerate until very cold. Serve over ice and enjoy it!
