Good for You Garden Vegetable Frittata

Ingredients
2 tablespoons olive oil
1 cup leeks, chopped (white and pale green parts)
1 cup mushrooms, sliced
1 medium zucchini, chopped
½ cup tomatoes, chopped and seeded
8 eggs
2 tablespoons chives, chopped
¼ cup grated parmesan cheese
1 cup fontina cheese, chopped
Salt
Black pepper

Cook Time: 30-35 min
Directions

Preheat your broiler. Heat olive oil in a 10 inch non-stick skillet over medium heat. Add leeks, mushrooms, and zucchini, sprinkle salt and pepper and sauté until tender, about 8-10 minutes. Stir in the tomatoes and cook another 5 minutes. Whisk together the eggs, salt, pepper, and chives in a medium bowl. Stir in ¾ cup of fontina cheese. Pour this mixture on top of the veggies in the skillet evenly and gently fold over to combine. Cook until almost set, about 15 minutes. Then, add the remaining fontina and parmesan cheese on top. Place in the broiler for 2-3 minutes until the cheese begins to turn golden. Cut into slices and enjoy!
