Porterhouse Steak with Crispy Onion Ring
Ingredients
For the Steak:
2 Porterhouse steaks (around 2 lbs or more)
Olive oil
Salt and freshly ground black pepper
For the Mashed Potatoes:
1 ½ lbs Yukon Gold Potatoes, peeled and quartered
½ teaspoon salt
4 tbsp heavy cream
2 tbsp butter
1 tbsp milk
Salt and pepper to taste
For the Onion Rings:
2 large onions
¾ cup buttermilk
2/3 cup flour
4 cups kettle chips
2 eggs
2 cups panko bread crumbs
2 tsp paprika
Salt and pepper
Directions

Leave steaks out 1-2 hours so they reach room temperature. Preheat your oven to 500 degrees. Place a cast iron skillet in the oven for 20 minutes to get it hot. Massage both sides of the steaks with olive oil and generously season with salt and pepper. Carefully place the steaks onto the hot skillet and cook in the oven for about 8 minutes until the bottom is nicely browned. Turn the steaks over and brown on the other side about 7-8 minutes for medium rare. Remove the steaks and let them rest a few minutes before cutting and serving! You can cook the steaks on an outdoor grill as well if you prefer!

For the mashed potatoes, place them into a saucepan with some salt. Add water until the potatoes are completely covered and bring to a boil. Reduce heat and simmer, covered, for 15-20 minutes or until a fork can easily pierce them. In a microwave safe bowl or over the stove, heat butter and cream until butter melts. Drain the potatoes. Now add cream and butter. Mash everything together. Beat further with a spoon to achieve a smoother consistency and add milk. Add salt and pepper to taste. Do not over mix the potatoes so they stay light and fluffy!

Finally, for the onion rings, you want to preheat your oven to 450 degrees. (If you’d like to fry them instead, add vegetable oil to deep sauté pan or pot and let it get very hot. Add onion rings a few at a time after you dredge them and fry until golden brown). Slice onions into ½ inch thick rings and season with salt and pepper. In a food processor, pulse the kettle chips and panko crumbs and place in a shallow dish with salt, pepper, and paprika. Place flour in another shallow dish and in a third dish whisk together the eggs and buttermilk, so you have a work station consisting of three steps. Dip each onion ring in the flour, then the egg/buttermilk, and finally coat in the panko/chips. Repeat for all rings and place on foil lined baking sheet. Bake for 15-20 minutes until golden brown.
