Sautéed Brussels Sprouts with Pancetta

1 clove garlic, chopped
1 1/2 pounds Brussels sprouts, washed and cut in half
1/2 pound sliced pancetta, chopped and diced
3 tablespoons Olive Oil
Salt
Freshly ground black pepper

Directions

Heat oil over medium heat in a large skillet. Add the pancetta and cook until golden brown. Then remove from the pan (but keep oil in pan with pancetta drippings) and place in a bowl lined with paper towels. Add the garlic to the pan and cook until the garlic starts to infuse and sizzle. Now add the Brussels sprouts and sauté until golden brown and caramelized. Season the Brussels sprouts with salt and pepper. Enjoy!!
