Strawberry-Ricotta Stuffed French Toast

Ingredients
¼ cup part-skim ricotta cheese
1 ¼ cups skim milk
½ teaspoon vanilla extract
1 tablespoon ground cinnamon
¼ teaspoon nutmeg
½ teaspoon lemon zest
1 cup fresh strawberries, washed and sliced
3 eggs
4 very thick slices of bread, like Challah, Italian or Texas Toast
Confectioner’s sugar

Directions

In a large bowl, mix the eggs, milk, cinnamon, nutmeg and vanilla. Set aside. Make an incision on the crust side of each slice of bread creating a pocket to stuff the filling in. In a medium bowl, mix together the strawberries, lemon zest and ricotta.

Gently spoon about a tablespoon or so of the filling inside of each slice of bread, careful not to overfill! Spray a large skillet with cooking spray and place over medium heat.

Carefully dip each stuffed bread slice into the egg mixture until all sides are moistened. Place on the skillet and cook for about 3 to 4 minutes per side until the bread is golden brown. Remove from heat and dust with confectioners’ sugar. Serve immediately. Enjoy and have a wonderful Mother’s Day!

Tip: To make it more decadent, spread a tablespoon of Nutella inside of the bread before adding the strawberry filling. Strawberry and Nutella is a wonderful combination. If your mom likes chocolate, she’ll love this!
