Sweet and Tangy Lemon Bars

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup powdered sugar
1 cup granulated sugar
1 tablespoon lemon zest (1 lemon grated)
2 tablespoons lemon juice
1/2 cup butter or margarine, softened
1/4 teaspoon salt
2 eggs
Confectioners' sugar for dusting

Directions

Preheat oven to 350 degrees. Mix flour, powdered sugar and butter in a bowl. Press onto the bottom and sides of an ungreased 9x9 baking pan and bake for 20 minutes. In a separate bowl, beat granulated sugar, lemon zest, lemon juice, baking powder, salt and eggs until light and fluffy with an electric mixer. Pour mixture onto baked, warm crust. Bake about another 25-30 minutes or until top is golden. Let cool completely and then dust with confectioners’ sugar. Cut into squares and enjoy!!
