Sweet Pineapple Chicken Kabobs on the Grill

1 (20 oz) can drained pineapple chunks
1/2 cup vegetable oil
2/3 cup honey
2/3 cup soy sauce
1/3 cup brown sugar
1/3 cup brown sugar
8 skinless, boneless chicken breast halves, cut into small cubes
2 garlic cloves, minced
5 small onions, cut into small pieces
1 red and 1 green bell pepper, cut into small pieces

Directions

In a large bowl, whisk together the oil, honey, soy sauce, brown sugar, and black pepper. Reserve some of this marinade to brush onto the kabobs later while grilling! Combine the chicken, garlic, onions, peppers, and pineapple in large bowl together with marinade and refrigerate for at least 2 hours. Then, preheat the grill on high heat. Remove chicken and vegetables from marinade and start skewering them alternating chicken and vegetable. Lightly oil the grill and place skewers on it. Grill about 15-20 minutes until chicken is cooked thoroughly, brushing and turning the skewers repeatedly with reserved marinade while grilling. Enjoy!

Suggested Side Dish: Since you’re already grilling kabobs, why not add corn on the cob? Peel back husks and remove silk of corn. Add a liberal amount of softened butter and salt to the corn. Close the husks back around the corn and wrap them in aluminum foil. Cook on the grill for about 30 minutes until corn is tender. Enjoy!
