Tasty Meatballs with Marinara Sauce

2 large shallots, peeled and chopped
¼ cup sun-dried tomatoes in oil, drained
1/3 cup packed fresh basil leaves
1/3 cup shredded mozzarella
¼ cup grated Parmesan cheese
1 tablespoon tomato paste
2 teaspoons crushed red pepper flakes
1 ½ pounds ground beef
1 pound ground pork
6 ounces smoked mozzarella, cut into 36 small cubes
1/3 cup olive oil
3 cups marinara sauce
Salt
Toothpicks
Directions

Preheat oven to 350 degrees. Spray a cooking sheet with cooking spray and set aside. In a food processor, pulse shallots along with the next 6 ingredients and add salt. (If you don’t have a food processor, just chop the ingredients finely.) Transfer the mixture to a large bowl. Add the beef and pork, mixing well to combine. Form into 36 equal sized meatballs. Insert one cube of smoked mozzarella into the center and be sure to enclose it so the meat surrounds it entirely.

Heat oil over medium heat in a large skillet and add half of the meatballs. Cook until evenly brown on all sides, turning occasionally, about 5 minutes. Drain them on paper towels and repeat with remaining meatballs. Place all of the meatballs onto the prepared baking sheet and bake for 8 to 10 minutes. Serve hot with toothpicks and warm marinara sauce. Enjoy!
